    5 lbs. fresh figs
    6 c. sugar
    water to cover, plus 3/4 c.
    1/4 c. lemon juice

    Recipe



    First you need to get the figs ready.
    Completely cover the figs with boiling water.
    Let stand for 10 minutes; then drain.
    Cut the stems off and chop the figs up.
    You will need 2 quarts of chopped figs.
    Combine the 2 quarts of figs, sugar and the 3/4 c. water in a large saucepan.
    Bring to a boil slowly and stir until the sugar dissolves.
    Then cook rapidly until it gets to a gelling point.
    Be sure to stir frequently as the mixture thickens to prevent it from sticking.
    Add the lemon juice and cook 1 minute longer.
    Remove from heat.
    Skim any foam from the top if necessary.
    Ladle into hot jars, leaving 1/4" space at the top.
    Seal and hot water bath for 15 minutes.
    Makes 5 pints.
