Pumpkin Butter

3 1/2 c. cooked (or canned) pumpkin
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. ground cloves
1 1 3/4oz. pkg. powdered fruit pectin
4 1/2 c. sugarRecipe
In a large saucepan, combine pumpkin, cinnamon, ginger, ground cloves, and pectin. Mix well. Bring mixture to a boil, stirring constantly.
Quickly add sugar, and bring back to a boil. Cook mixture for 1 more minute. Remove from heat.
Skim off any foam then pour into hot jars, filling to 1/4" from the top.
A 10 minute hot bath is suggested for storage.
Makes 3 pints.
*If giving for gifts that will be used right away, it is not necessary to do the hot bath.
