    bread - Gift Breads, baked in a jar

    Gather canning supplies: 8 wide mouth pint jars, 8 lids and 8 rings.
    Wash jars in hot soapy water. Rinse. Dry. Grease with shortening.
    Place lids in pan. Pour boiling water over them. Do not boil, but
    let stay in water until ready to use.

    Recipes:


    Pumpkin Bread in a Jar

    2/3 cup shortening
    2 2/3 cups sugar
    4 eggs
    2 ccup solid packed canned pumpkin*
    2/3 cup water
    3 1/3 cups flour
    1/2 teaspoon baking powder
    2 teaspoon baking soda
    1 1/2 teaspoons salt
    1 teaspoon ground cinnamon
    1 teaspoon ground cloves
    2/3 cup chopped nuts (optional)

    Cream shortening and sugar. Beat in eggs, pumpkin* and water. Sift
    together flour, baking powder, soda, salt and spices. Add to pumpkin
    mixture. Stir in nuts. 5. Pour batter into 8 wide-mouth greased
    pint jars, filling them 1/2 full of batter. Bake at 325 degrees
    about 45 to 55 minutes. 6. When done, remove 1 jar at a time from
    oven. (If bread has risen above edge of jar, cut off the
    excess.) Wipe edge of jar clean, put on scalded lid, and screw
    band firmly tight. 7. Decorate jar for holiday gift.

    *May substitute 2 cups pumpkin
    from the pumpkin bread recipe with the
    following combinations:
    1 cup shredded apple and 1 cup shredded carrot
    or
    2 cups shredded apple and 2 cups applesauce
    or 1 3/4 cups applesauce and 1/4 cup crushed pineapple
    or 1 3/4 cups applesauce and 1/4 cup raisins
    or 2 cups shredded carrots and 2 cups zucchini
    or add 1 bag ground whole cranberries (fresh)
    or 1 can whole or pureed cranberry sauce
    or 2 cups mashed bananas
    or 1 3/4 cups mashed bananas and 1/4 cup orange marmalade
    or 1 3/4 cups mashed bananas and 1/4 cup crushed pineapple

    When left sealed stays moist and is good for months.

    Apple Cake in a Jar

    2/3 cup shortening
    2 2/3 cups sugar
    4 eggs
    3 cups Granny Smith apples, peeled and grated
    2/3 cup raisins
    2/3 cup water
    3 cups all purpose flour
    2 teaspoons baking soda
    1/2 teaspoon baking powder
    1 1/2 teaspoons salt
    1 teaspoon ground cinnamon
    1/2 teaspoon nutmeg, grated
    2/3 cup chopped nuts, optional
    8 pint size, wide mouth canning jars, with lids and rings
    ...be SURE to use only tempered, wide mouth canning jars,
    ...if the jar has a neck, the cake will not come out

    Sterilize jars, rings and lids by boiling them for 10 minutes.
    Remove jars to drain, air dry and cool. Leave rings and lids
    in hot water until ready to use.
    Grease the inside of cooled jars generously with margarine.
    Remove the top baking rack of the oven. Place other rack
    in the middle of the oven, and place a baking sheet on that.
    Preheat oven to 325 degrees F.
    In a large mixing bowl, combine shortening, sugar and eggs.
    Add apples, raisins and water.
    In another bowl, sift together flour, baking soda, baking
    powder, salt, cinnamon and nutmeg.
    Add to apple mixture, mixing well. Add nuts, if using.
    Fill jars 1/2 full with batter. Bake for 45 minutes without
    the lids.
    Remove jars one at a time. Wipe jar edge with a moist paper
    towel. Seal jars with lids and screw rings down tightly. The
    jars will seal as they cool.
    To check on seal, push on lid...it should not move.
    Makes 8 jars, 5 slices per jar.
    To serve, slide cake out of jar and slice.
    Serve with whipped cream or vanilla ice cream.
