    Lamb - Crusty Roast Lamb

    List of Ingredients

    1, 4 pound shoulder of lamb
    2 tablespoons softened butter
    1 1/2 pounds peeled + sliced a medium thickness potatoes
    1 large diced onion
    1 large peeled, cored and sliced cooking apple
    1 cup fresh breadcrumbs
    1/2 teaspoon dried rosemary
    1 teaspoon salt
    1/2 teaspoon ground black pepper
    1 1/4 cups chicken stock

    Recipe

    Preheat oven to 400 degrees F.
    Wipe the lamb and cut criss cross slits around top.
    Mix breadcrumbs, rosemary, butter, salt and pepper.
    Rub mixture onto top of the meat, pressing down well
    so that it sticks.
    Fill bottom of a roasting pan with vegetables and apple.
    Mix and season well with salt and pepper.
    Place lamb on top.
    Pour stock into the pan, but NOT over meat.
    Cover loosely with foil.
    Bake for 30 minutes.
    Reduce temperature to 350 degrees F.
    Remove foil and bake 30 - 35 minutes.
    This makes the top brown and crusty and to completely
    cook vegetables.
    Makes 6 servings.
