    Roast Lamb

    1, 5 pound leg of lamb, trimmed of all visible fat
    5 cloves of garlic, cut into slivers
    1/4 cup lemon juice
    2 tablespoons dried oregano
    1/2 cup white wine or white grape juice

    Preheat oven to 350 degrees F.
    Wipe roast well with a damp paper towel.
    With a very sharp, small knife, cut about 20 slices all
    over the leg.
    Insert a garlic sliver into each slice.
    Mix lemon juice and oregano.
    Rub over the lamb with fingers.
    Place in a roasting pan.
    Pour wine into pan and cook, uncovered until done, about
    1 1/2 hours, basting every 20 minutes with the pan juices. Let stand 15 minutes before carving.
    Makes 8 servings.
