Veal Saltimbocca #15
2 pounds veal cutlet, sliced very thin (italian style)
1 teaspoon ground sage
1/4 pound low salt prosciutto or ham, sliced thin
3 tablespoons low fat buttery tasting margarine
salt substitute
ground black pepper
3 to 4 tablespoons water
Cut veal cutlet into about 5 inch square pieces. On each piece sprinkle a little of the sage and place a slice of prosciutto on top. Keep prosciutto in place on veal with a toothpick. Melt margarine in frying pan and place meat in it. Sprinkle with salt and pepper. Cook over high fire for a few minutes on each side until the veal is well browned. Place on hot plates. Add water to pan and scrape up bottom. Pour over meat and serve.Recipe
