Beef Pilaf, ( 50 )
2 1/2 pounds long grain rice
2 pounds chopped onions
10 cups tomato puree
1 teaspoon ground black pepper
5 pounds ground beef
4 Tablespoons Olive oil
2 Tablespoons salt
Italian flavored breadcrumbs
grated cheese
Cook ground beef in pot with no oil or water.
Cook rice in a rice cooker (if you have one big enough) or
else in a pot of salted water. Use about twice as many cups
of water as you have rice and cover the pot at all times.
Bring to a boil and then turn heat down and let rice gently
boil until almost all water is gone (delicate process because
when water is gone rice will burn on bottom of pot so watch
carefully!) Should be about 30 minutes.
Fry onion in oil until golden brown.
Mix rice, ground beef, tomato, onions and seasonings together.
Place in 2 greased roasting dishes.
Sprinkle with breadcrumbs and cheese.
Bake at 350 degrees F. until hot and crumbs are golden brown,
approximately 1 hour.
Serving suggestion:
Serve with salad or big pot of cooked vegetables for a
complete meal.
