Broccoli Cheese Soup (32)
14 cups water
12 packets chicken broth
2 large (or 4 med.) frozen broccoli cuts
2 mediuim onions, diced and sauteed, optional
2, 8 ounce packages thin spaghetti pasta,
...broken into 4 parts
12 cups milk (can use light evaporated milk)
2 pounds Velveeta type cheese (regular or light)
Add water to extra large pan.
Add chicken broth.
Add broccoli cuts.
Add sauteed onions.
Cover and simmer until broccoli is done.
Cook pasta al dente to package directions. Drain.
Add pasta and milk. Bring just to boil.
Turn off stove.
Add cheese and cover.
The cheese melts by itself.
May be transferred to crock pot for serving.
Makes 32 servings.
