Cabbage + Kielbasa w/Pierogies, ( 48 )
144 each Giorgio Potato & Cheddar Cheese Pierogies
8 heads cabbage, quartered and sliced (16 pounds)
..(bag of cole slaw mix saves time.)
12 cloves crushed garlic
2 cups butter
12 pounds Kielbasa, cut into 1/2 inch slices
12 cups chicken or vegetable broth
salt and pepper to taste
Add butter to a large heated saute pan (non-stick works best).
Add cabbage and saute for 7-8 minutes.
Add garlic and cook for 1 minute.
Add stock and continue cooking for 10 to 12 minutes.
Add kielbasa slices to pan.
Boil pierogies for 5 minutes, drain and add to mix.
Cook until all ingredients are hot.
Season with salt and pepper.
Yield: 48 servings
