    Chicken w/Pineapple + Brown Rice, ( 48 )

    12 cups brown rice
    12, 14 ounce cans chicken broth
    6, 16 ounce cans pineapple chunks, undrained
    12 chopped sweet green bell peppers
    12 finely chopped or shredded carrots
    6 teaspoons ground ginger
    48 boneless, skinless chicken breasts
    24 Tablespoons teriyaki sauce

    Coat 12, 13x9x2 inch baking dishes or banquet trays that
    will hold all, with cooking spray.
    Mix all the ingredients together except the chicken
    and the teriyaki sauce.
    Pour into the baking dish.
    Place chicken on top and baste with the teriyaki sauce.
    Cover with foil and bake at 375 degrees F. for 45 minutes
    or until the chicken is completely cooked and tender.
    Makes 48 servings.
