Chili, (40)
8 pounds ground beef
8 cups chopped onion
8, 28 ounce cans tomatoes
8, 16 ounce cans kidney beans, drained
...(reserve liquid)
2, 15 ounce cans tomato sauce
1/4 cup sugar
6 Tablespoons chili powder
3 Tablespoons salt
Cook and stir ground beef and onion in a large
heavy roaster until meat is browned and onion
is tender.
Stir in tomatoes, liquid from kidney beans, tomato
sauce, and seasonings.
Simmer uncovered 1 hour 15 minutes.
Add beans and simmer uncovered 15 minutes, or
until of desired consistency. Stir occasionally.
Makes 40, 1 1/2 cup servings.
