    Coconut Jam Tarts, (60)

    60 regular sized frozen tart shells, unsweetened
    2 cups softened butter
    2 cups granulated white sugar
    8 eggs, beaten
    4 cups shredded coconut
    4 teaspoons vanilla
    1 cup raspberry jam, good quality

    Set the tart shells on baking sheets.
    Heat oven to 350 degrees F.
    Mix ingredients together in order given, except the jam.
    Spoon 1/2 teaspoon of jam into the bottom of each shell.
    Cover with the coconut mixture, dividing evenly between
    the tarts.
    Bake until golden.

    Notes:
    Tasty and attractive and they freeze well.
