This colorful rice pilaf is made with no added fat.
Confetti Rice (50)
1 gallon cooked brown rice
1 quart frozen corn
1 quart frozen peas
1 quart diced red bell pepper
4 teaspoons curry powder
2 cups raisins (optional)
Preheat oven to 350 degrees F.
Mix all ingredients together thoroughly.
Spread in a full pan or other large baking pan.
Cover with foil.
Bake at 350 degrees until very hot, about 30 minutes.
Makes 50, 1/2 cup servings.
