Cream Cheese Cake Squares ( 60 )
3, 2 layer yellow cake mixes
1 1/2 cups butter, softened
3 cups chopped pecans
6 eggs, plus 6 more eggs, keep separated
3, 8 ounce packages cream cheese, softened
3, 16 ounce packages powdered confectioners sugar
Heat oven to 350 degrees F.
Lightly grease 3, 8x11x2 inch baking pans and set aside.
In a bowl, mix the cake mixes, butter, pecans and 6 eggs
with a large spoon.
Transfer dough to the baking pans and use plastic wrap
or chill your hand with ice water to press the mixture into
the pan, distributing it evenly. It will be very sticky.
In a separate bowl, lightly beat the remaining 6 eggs.
Add the cream cheese.
Gradually add the confectioners sugar and lightly mix.
It should be slightly lumpy.
Spoon the cream cheese mixture over the cake mixture
and use the back of a spoon or spatula to spread it evenly.
Bake for 45 to 50 minutes, or until dark golden brown.
Cool thoroughly, at least 1 hour.
Run a knife around the sides of the pan and cut into squares.
Makes 60 servings.
