Half Baked Seasoned Potatoes (50)
25 large baking potatoes
1/2 teaspoon garlic salt
1/2 teaspoon celery salt
1/2 teaspoon ground white pepper
1/2 teaspoon ground black pepper
1 Tablespoon plus 1 teaspoon ground paprika
1 teaspoon plain salt
extra virgin Olive oil
Wash potatoes well and cut in half lengthwise, skin on.
Mix spices and place in spice shaker.
Spread 2 Tablespoons (1 ounce) of oil in 4, 12x20x2 1/2
inch steam table pan. (You may need more pans, depending
on the size of your potatoes)
Place 13 potato halves in 2 pans, 14 potato halves in the other
2 pans, cut side down, to lightly coat potato surface with oil.
Turn cut side up.
Sprinkle spice mixture over potatoes.
Turn potatoes cut-side down for browning.
Bake at 450 degrees F. for 25 to 30 minutes (conventional oven)
OR
425 degrees F. for 20 to 25 minutes (convection oven).
Bake until the surface is golden brown.
Makes 50 servings of 1/2 potato.
