Recipe Introduction
This can be made in an electric roasting pan, on an outdoor gas/charcoal grill, or in the oven, just adapt instructions.
List of Ingredients
1, 8 to 10 pound fully cooked boneless ham,
...(whole or half, your choice), trimmed of fat
1 cup honey
1/4 cup mild steak sauce
1 teaspoon dry mustard
Cut a small section from the top of the ham, so you have a
hole, or cavity, in the center. Set aside.
Place the ham in a shallow roasting pan that has been covered
with foil, or use a foil roasting pan.
Finely dice the core of ham you had cut from the top center
of the ham.
Place in a small bowl and stir together with the honey,
steak sauce, and dry mustard.
Pour over the ham. and into the cavity.
Cover tightly with a large piece of Heavy foil.
Cook on grill using a medium heat for 1 3/4 - 2 hours or until
a meat thermometer inserted to center reads 140 degrees F.
Fold the top section of foil back and continue to cook for 20
to 30 minutes so the ham absorbs the grilling flavor.
Remove the ham and let set for 15 minutes.
Place on a cutting board and slice.
Serve with the warm cooking juices.
Makes 20 - 30 servings, depending on serving size.
Usually figure 1/2 pound serving per person.
**IF you are using charcoal briquettes, you can test for a medium
heat on the grill, when you can hold your hand over a pan at the
height the food will be, for 4 seconds before pulling it away.
