72 each Giorgio Mini Potato & Onion Pierogies,
cooked 5 minutes
8 Tablespoons Sesame Oil
4 pounds Ham, cut into cubes
3 each Red Bell Peppers, cut into strips
20 each Plums, pitted and sliced
2 each Leeks, cut into rings and washed
24 each Scallions, thinly sliced
4 cups Orange Juice
8 Tablespoons Peach or Apricot Preserves
8 Tablespoons Teriyaki Sauce
8 Tablespoons White Wine Vinegar
8 Tablespoons Cornstarch, dissolved in 2 Tablespoons
cold water
Heat wok or sauté pan until hot. Add sesame oil to coat pan. Add ham,
pepper, and plums. Stir fry for 1-2 minutes. Add leeks, scallions and cooked
Mini Pierogies. Stir fry for 2-3 minutes or until vegetables begin to
soften.
Stir in orange juice, preserves, teriyaki, and vinegar. Bring liquid to
boil. Slowly stir in cornstarch mixture. Cook 1 minute until sauce thickens
and coats vegetables and pierogies.
For a healthier alternative, substitute low sodium soy sauce and turkey ham.
Can hold on steam table for up to 45 minutes.
