Meat Balls + Noodles, (50)
Mix:
7 pounds ground beef
7 eggs, slightly beaten
1 1/2 cups bread crumbs
2 Tablespoons salt
1 teaspoon grouond black pepper
3/4 cup cooking fat or drippings
4 cups chopped onion
3 cups chopped celery
Roll into 100 meatballs.
Brown balls on all sides in 3/4 cup cooking fat or drippings.
Add onion and celery and cook until light brown.
Stir in:
5 quarts cooked tomatoes
1 cup sugar
2 Tablespoons Worcestershire sauce
2 Tablespoons salt
1/2 teaspoon ground black pepper
1 teaspoon hot sauce
Cover and simmer for, 30 minutes.
4 pounds noodles
Cook noodles al dente to package directions. Set aside.
1 cup butter
2 cups sifted flour
Cream together butter with flour and stir, into meat ball mixture.
Cook until thickened.
Serve meatballs with sauce over cooked noodles.
Serves 50.
