This is one of the recipes that we used at work to feed
men. One person brought the groceries and the cost was
shared equally.
Meatloaf, Potatoes + Carrots w/Gravy ( 24 )
for meatloaf:
6 pounds lean ground beef
1 cup chopped green onions
1 cup chopped celery
2, 14 ounce cans can tomatoe sauce
1/2 cup chopped green pepper, optional
6 eggs
2 tablespoons salt
1/2 teaspoon ground black pepper
3 cups bread crumbs
2 teaspoons garlic powder
for gravy:
2 cans Rotel tomatoes
4 cans celery soup
2 cans cream chicken soup
1 teaspoon garlic powder
2 packets dry onion soup
1 cup chopped green onions
1 teaspoon ground black pepper
for vegetables:
4 pounds chopped potatoes
2 pounds sliced carrots
NOTE: [no salt was added to the gravy
as the soups have a sufficient amount.
Mix meat loaf ingredients well and form 2 loafs,
one on each side of a -----16 quart roaster--
should be 2x as large for this recipe---
and cook uncovered in a 345 degree oven for 1 hr.
or until it starts to brown.
Mix gravy ingredients in a pan and dilute with water
to the thickness you like your gravy.
Remove roaster from oven.
Place potatoes on one side and carrots on the other.
Pour gravy mix over carrots and potatoes.
Cover and c for 2 1/2 hours.
Serves 24.
Note:
Each item, may be removed and served in a bowl by
itself, or the roaster may be placed in the center of
the table.
