Pasta Primavera w/Vegetables, (75/80)
9 1/2 pounds fresh angel hair pasta
2 gallons + 6 cups milk
2 1/3 cups all purpose flour
19 pounds frozen vegetable(s) of choice,
1/3 cup + 1 Tablespoon dried basil ,
...or 1 1/4 cups freshly chopped
9 1/3 cups freshly grated Parmesan cheese
Cook pasta al dente to package directions. Drain and keep warm.
Combine milk and flour in a bowl. Blend with a whisk until smooth.
Heat a heavy nonstick pan over medium/high heat.
Add vegetables, milk mixture and basil. Stir to combine well.
Bring to a boil, then cook for 2 - 3 minutes over a medium heat,
stirring constantly, until slightly thickened.
Add Parmesan and stir to blend. Cook about 1 minute and serve
over pasta.
Makes 75/80 servings.
