    Pierogie Primavera Salad, ( 24 )

    60 each Giorgio Mini Potato & Cheddar Cheese Pierogies,
    boiled 7 minutes & cooled
    6 each Medium Carrots, peeled and cut into thin sticks
    3 heads Broccoli, fresh cut into florets
    3 heads Cauliflower, fresh cut into florets
    3 each Red Bell Peppers, cut into medium dice
    3 each Cucumbers, peeled and diced
    6 cups Spinach leaves, fresh large cut
    3, 8 ounce bottles of a good bottled Italian dressing

    In a large mixing bowl, combine cooked pierogies, carrots, broccoli,
    cauliflower, bell pepper, cucumber, and spinach.
    Add salad dressing and mix well until all ingredients are covered. Season
    with salt and pepper.
    For best results, refrigerate salad overnight.
    Yield: 24 servings
