I did the math to increase the serving sizes,in case someone wanted to make this for a large gathering.
List of Ingredients
Roast Beef + Potato Salad
8 cups cubed cooked roast beef
8 cups cubed peeled/cooked potatoes
2 cups chopped green pepper
2 cups thinly sliced celery
1 cup finely chopped onion
1/2 cup chopped pimientos
1 1/3 cups vegetable oil
1/2 to 3/4 cup white vinegar
2 tablespoons prepared horseradish, (not the creamy type)
2 teaspoons salt
1/2 teaspoon ground black pepper
lettuce leaves, to serve on
freshly chopped parsley, for garnish
In a container large to hold everything, combine beef, potatoes, green
pepper, celery, onion and pimientos.
Combine the next five ingredients together and mix well.
Pour over beef mixture and toss to coat.
Cover and refrigerate for at least 1 hour.
Serve on lettuce and sprinkle with parsley, if desired.
Makes 16 servings.
