9 pounds Sausage
6 large red bell peppers, cut into strips
6 large green bell peppers, cut into strips
6 large onions, cut into strips
1-1/2 quarts Giorgio mushrooms, canned or fresh, sliced
96 Giorgio Potato & Onion Pierogies, cooked 5 minutes
3 quarts Marinara Sauce
In a heavy skillet, brown sausage until fully cooked. Cut into 6
ounce portions. Add peppers, onions, and mushrooms. Saute until vegetables
become tender. Next, add the pierogies and marinara sauce.
Simmer on low to medium heat for 10-15 minutes.
Top with Parmesan or Mozzarella Cheese for an added touch.
Can be held on the steam table for up to 45 minutes.
For a healthier substitute, use turkey sausage.
