Sausage + Peppers ( 60 )
20 pounds country style sausage links
32 sliced green peppers
16 large sliced white onions
Place the whole sausage links in an extra large roasting pan.
Bake at 350 degrees F. for about 45 minutes, or until
brown, turning and pricking carefully with a fork at
15 minute intervals.
Remove from oven and drain off 1/2 of the drippings.
Cut sausage into desired serving pieces and return to pan.
Add the peppers and onions.
Mix well to coat with the drippings in the pan.
Cover. Cook 45 minutes more, or until the peppers are
just tender.
Makes 60 servings.
