96 Giorgio American Cheese Pierogies,
boiled 7 minutes
12 ounces + 6 ounces butter, separated
2, 10 ounce packages frozen chopped broccoli,
...thawed, partially cooked and drained
12 ounces flour, all-purpose
2 tablespoons salt
1 tablespoon dry mustard
1/4 cup worcestershire sauce
1 gallon milk, skim
1 pound bread crumbs
Place pierogies in bottom of pan. Place broccoli
on top of pierogies. Melt 12 ounces of butter.
Stir in salt, mustard and Worchestershire
sauce to make a paste. Slowly stir in the milk.
Pour over top of broccoli. Melt 6 ounces butter
and mix with crumbs. Sprinkle over top. Bake
until heated through.
Yield: 32 servings
