3 pounds canned smoked fish
9 hard boiled eggs
1/2 pound bacon
breadcrumbs
grated cheese
Sauce:
6 cups whole milk
4 1/2 ounces butter
1 cup flour
2 teaspoons salt
1/4 teaspoon pepper
Make sauce by melting butter in saucepan. Add flour and stir until you get a
smooth paste. Add milk, salt and pepper and bring to the boil, stirring as
you do so to eliminate any lumps. Once boiling it should quickly thicken.
Take off heat.
Break up fish into bite-size chunks and mix with chopped eggs, chopped bacon
and sauce in 2-3 large casserole dishes or a large roasting pan. Top with a
layer of grated cheese and breadcrumbs. Bake in a moderate oven (350 degrees
F) until heated right through.
Serving suggestion: Serve on rice with a salad or big pot of cooked
vegetables.
