Swiss Steak #1, (50)
12 1/2 pounds round steak, (1/2 inch thick)
...and cut into 4 ounce pieces
3 cups extra light Olive oil
1 1/2 cups flour
1 pound freshly minced onions
2 freshly minced garlic cloves
6 quarts beef broth/stock
12 ounces tomato puree, heated
salt and pepper to taste
eat oil in a skillet. Brown steak on both sides and
then place in roasting pan.
Saute onions and garlic in same skillet. Quickly stir
in the flour and brown slightly. Add broth and puree,
whipping constantly, to make a smooth sauce.
Season with salt and pepper. Pour sauce over steak
in roasting pan.
Cover and bake at 350 degrees F. for approximately
2 hours or until steak is tender.
Makes 50 servings.
