Recipe Introduction
When buying asparagus, look for firm, bright green spears with tightly closed tips.
List of Ingredients
LowCarb - Creamy Garlic Asparagus
1 lb. fresh asparagus
1 4oz. container sour cream, (or low fat sour cream to lower fat and calories)
1 tbsp. milk or cream, (or low fat milk to lower fat and calories)
2 tsp. white wine vinegar
2 tsp. olive oil
3 minced garlic cloves
black pepper to taste
Snap off the tough ends of the asparagus and steam until crisp/tender, about 6 minutes.
To stop the cooking process, cover asparagus with ice water.
Drain and chill until ready to serve.
Mix the sour cream, milk, vinegar, olive oil, cloves and black pepper together to make a dressing.
You can make the dressing ahead and let set in the refrigerator before adding to spears.
To serve, spoon dressing over the cooled asparagus spears.
Makes 4 servings.
