LowCarb - Seabass w/Bacon + Mushrooms
4 seabass filets (about 6 oz. each)
2 slices bacon or turkey bacon
1 cup sliced fresh mushrooms
3 tablespoons butter
1/2 teaspoon tarragon
Cook bacon in a skillet until crisp, save drippings. Crumble bacon and set
aside. Sauté mushrooms and onion in bacon drippings until tender, about 10
minutes. Add butter and tarragon to mushrooms and onion mixture and heat
until butter melts. Place fish in a baking dish. Spread mushrooms on fish,
sprinkle with bacon and bake until fish has cooked, about 20 minute (fish
will flake easily with a fork when cooked).
