LowCarb - Vanilla Ice Cream
2 C heavy cream
4 egg yolks
6-8 packets sugar-free sweetener of choice
1 tablespoon vanilla extract
2 tablespoons sugar-free vanilla instant pudding powder
Heat cream over low heat, do not boil. Whisk in one egg yolk at a time and
heat, stirring constantly until mixture starts to thicken. Remove from heat
and cool to room temperature. Whisk in sugar substitute and vanilla and
pudding powder. Place in an ice cream maker and finish the process according
to manufacturer's instructions.
Makes 6 1/2 cup servings.Recipe
