    LowFat - Orange Tapioca

    List of Ingredients

    Orange Tapioca

    3 tablespoons quick cooking tapioca
    1 tablespoon sugar, (or sugar substitute for less)
    pinch of salt
    1 1/2 cups fat free milk
    1 large egg, beaten, or 1/4 cup egg substitute
    1/2 cup orange juice
    1/2 teaspoon pure vanilla extract
    1 diced orange, seeds out

    Combine the tapioca, sugar, salt, milk and egg together in a small
    non stick saucepan. Use a medium heat and cook until it comes
    to a boil, stirring constantly. Remove from the heat.
    Slowly add the orange juice while stirring constantly.
    Return to heat, and cook until it boils again, stirring constantly.
    Remove from the heat and let cool for 10 to 15 minutes, stirring
    occasionally.
    Stir in the vanilla and orange.
    Chill at least 2 hours before serving.
    Makes 4 servings.
