LowCarb - Pizza Chicken

Recipe Introduction
Great while craving pizza on a low carb diet. You can serve this chicken with berbed tomato sauce or some bottled pizza sauce.
List of Ingredients
Pizza Chicken
4 boneless, skinless chicken breasts
1 beaten egg
1/2 c. Parmesan cheese
2 tbsp. Italian herbs
4 slices provolone cheese
1 tsp. butter
Preheat oven to 425. Grease a 9x13x2" baking dish.
Place each chicken breast between 2 pieces of plastic wrap or waxed paper and pound with a mallet or side of a rolling pin to flatten slightly.
Mix the Parmesan cheese with the herbs.
Dip flattened chicken in beaten egg then roll in Parmesan/herb mixture to coat.
Place coated chicken pieces in the baking dish.
Dot with butter and bake for 20 - 25 minutes or until done.
Place a slice of provolone cheese over each breast during last 2 - 3 minutes of baking so the cheese will melt.
Makes 4 servings.
