Plum Chicken
2 skinless chicken breasts
1/4 c. plum sauce
3 tbsp. plum jam
1 tbsp. soy sauce
1 tsp. grated ginger
2 cloves garlic
Make several parallel 2" deep slashes in each chicken breast.
Place plum sauce and jam, soy sauce, grated ginger and garlic in a bowl. Mix to combine.
Add chicken, turn to coat, cover and marinade in the refrigerator for 2 hours or overnight.
Lightly spray a non stick baking tray with cooking spray.
Drain chicken and place on tray.
Bake at 425 for 20 minutes or until chicken is cooked through.
Serves 2.
Serve with boiled or steamed rice and a tossed green salad.
