LowFat - Rosemary Chicken w/Fruit Sauce

Recipe Introduction
Try serving with rice, either green beans or snap peas cooked whole
in chicken broth, and a green salad with this. No one will guess this
is low fat.
List of Ingredients
Rosemary Chicken w/Fruit Sauce
4 boneless chicken breast halves
1 medium chopped onion
2 minced garlic cloves
1/2 cup dried apricots, cut into thin strips
1/4 cup golden raisins
1/4 cup packed light brown sugar
2 tablespoons balsamic vinegar
1/4 teaspoon dried rosemary
1, 14 ounce can chicken broth
...(use low sodium for less)
Coat a frying pan with cooking spray.
Add the chicken, (may salt and pepper if you wish), and cook for
12 minutes, or until browned and cooked through.
Remove chicken to a platter and keep warm.
Add the onion and garlic to frying pan and cook until tender.
Add the apricot strips, raisins, sugar, vinegar, rosemary, and broth.
Bring to a boil. Then reduce heat to medium and cook for 10 minutes,
or until the sauce is slightly thickened and reduced to about 1 3/4 cups.
Pour sauce over the warmed chicken. May garnish with rosemary sprigs
and cinnamon apple rings.Makes 4 servings.
