Rosemary Garlic Beef Rib Roast
6 - 8 lbs. well trimmed beef rib roast, small end (3 - 4 ribs)
for the seasoning:
1 tbsp. dried crushed rosemary
3 cloves crushed garlic
3/4 tsp. salt
1/4 tsp. pepper
Preheat the oven to 350.
Combine the seasoning ingredients and press evenly into the surface of the roast.
Place the roast, fat side up, in shallow roasting pan.
Insert an ovenproof meat thermometer so the tip is centered in thickest part of the beef, not touching any bone or resting in fat.
Do not add any water or cover.
Roast for 2 1/4 - 2 1/2 hours for medium/rare, 2 3/4 - 3 hours for medium doneness.
Remove roast when meat thermometer registers 135 for medium/rare, 150 for medium.
Let stand for 15 minutes. The temperature will continue to rise to 145 for medium/rare, 160 for medium.
Carve into slices and serve.
Makes 8 - 10 servings.
