LowCarb - Seafood Vinaigrette Salad

This low carb, but Not low cholesterol.
List of Ingredients
Seafood Vinaigrette Salad
3/8 c. salt, (3oz.)
12 whole black peppercorns
3 bay leaves
12 oz. shrimp, peeled and cleaned
12. oz scallops
8 oz. calamari
lobster, crab, mussels, additional optional ingredients
5/8 c. white wine vinegar, (5oz.)
3/8 c. extra virgin olive oil, (3oz.)
1 tsp. Dijon mustard
1 green bell pepper, julienned
1 red bell pepper, julienned
1 medium onion, julienned
Fill a large saucepan 3/4 full of water.
Add the salt, whole black peppercorns and the bay leaves and bring to a
boil.
When water is boiling, add the seafood and boil for five minutes.
Then drain and let the seafood cool.
Use a separate bowl to mix the vinegar, olive oil and mustard.
Stir in the green and red peppers, onions and the cooled seafood. Mix well.
Refrigerate for 2 - 3 hours.
Serve on a bed of lettuce.
Makes 4 servings.
