LowCarb - Swedish Cured Salmon

Swedish Cured Salmon
3 lbs. salmon, preferably center cut, cleaned of bones
1/4 c. sugar
3 1/2 tbsp. dried dill
1/4 c. kosher salt
1 tsp. ground black pepper
Pat the salmon dry.
Mix the salt, pepper, sugar and dill together.
Rub the salmon flesh with the seasonings mixture.
Cover with plastic wrap.
Place a heavy object on top of the salmon.
Refrigerate for 48 - 72 hours, (2 - 3 days.)
Scrape off the seasonings before serving.
Slice as if it were smoked salmon.
Makes 8 - 10 servings.
