If you have pizza cravings, then this low carb pizza should help.
Zucchini or spaghetti squash work equally well for this crust, with spaghetti squash providing a somewhat sweeter flavor. You could add whatever pizza topping are you like, including pepperoni or sausage or other vegetables.
List of Ingredients
Vegetarian Pizza
3 c. grated raw zucchini, or 3 c. cooked spaghetti squash
2 beaten eggs
1 1/2 c. + 1 c. Mozzarella cheese, separated
1 1/2 c. tomato sauce
1/2 small, thinly sliced onion
1 small chopped green bell pepper
1/2 c. sliced mushrooms
1/4 c. sliced black olives
1/2 c. freshly grated Parmesan cheese
1 tsp. dried oregano
1 tsp. dried basil
1 tbsp. olive oil
Preheat oven to 400. You need a 9" pie pan for this, NOT a pizza pan.
Squeeze the excess moisture out of the grated zucchini or cooked spaghetti squash with paper towels.
Mix the squash, eggs and the 1 1/2 c. Mozzarella together and press into the bottom of the pie pan.
Bake for about 10 minutes.
Remove the pan from the oven and spread on the tomato sauce.
Sprinkle the onion, pepper, mushrooms, olives and the 1 c. Mozzarella and the Parmesan cheese over the sauce.
Sprinkle with the oregano and basil and drizzle the olive oil over the top.
Bake for 25 minutes or until cheese is lightly browned.
Makes 3 - 4 servings.
