Skillet Squash
1 medium acorn squash
1/3 c. pineapple juice
1 tbsp. light sugar
1/4 tsp. cinnamon
Cut the squash crosswise, (rounded) into 1/2" slices and discard seeds.
Arrange the ring slices in a large skillet.
In small bowl, combine juice, sugar and cinnamon.
Pour the mixed juice over the squash rings.
Bring to boil. Then reduce heat and simmer, covered, for 25 minutes or until the squash is tender.
Arrange the squash on a platter and pour remaining sauce over squash.
Makes 4 servings.
