Garlic Meatballs + Rice
3/4 lb. extra lean ground beef
1 slice whole wheat bread, crumbled
1/4 c. salsa
4 finely chopped garlic cloves
2 8oz. cans tomato sauce
3 c. hot cooked rice
Mix all the ingredients together except the tomato sauce and rice.
Shape into sixteen 1 1/2" meatballs.
Coat a non stick pan with cooking spray and use a medium/high heat.
Place the meatballs in the skillet and quickly spray meatballs with the nonstick cooking spray.
Cook until the meatballs are brown on all sides.
Stir in the tomato sauce and heat to boiling.
Reduce the heat to low, cover and simmer for about 20 minutes, stirring occasionally until meatballs are no longer pink in center.
Serve over rice.
