LowFat - Spanish Rice

Spanish Rice
1/2 chopped onion
1/2 chopped green bell pepper, seeds reserved
1/2 chopped red bell pepper, seeds reserved
1 minced clove garlic
1 28oz. can low sodium chopped tomatoes, (or 3 fresh), juices reserved
1/2 c. low sodium tomato juice
1 1/2 c. short grain white rice
1 tsp. sugar
1 1/2 tsp. chili powder
freshly ground black pepper
1/4 tsp. hot sauce
Use a large nonstick skillet, over a medium heat and steam the onion, peppers, seeds, and garlic in 1/2 inch water. Add small amounts of water to keep the mixture moist, until tender.
Add the tomatoes to the mixture.
Stir in the reserved tomato juices, rice, sugar, chili powder, pepper, and hot sauce.
Cover and cook over low heat for 20 to 25 minutes, stirring occasionally, until the liquid is absorbed.
Makes 6 servings.
