Warm Spinach Parmesan Dip
2 tbsp. butter
2 tbsp. olive oil
1 med. finely chopped onion
8 large minced garlic cloves
2 tbsp. flour
1/2 c. chicken stock
1/2 c. whipping cream
1/2 10oz. pkg. frozen chopped spinach, thawed and squeezed dry
1 c. freshly grated Parmesan cheese
1/3 c. sour cream
1/2 tsp. cayenne pepper
salt and pepper to taste
Melt the butter with the oil in a large heavy frying pan over a medium heat.
Add the onion and garlic.
Saute until the onion is tender, about 6 minutes.
Stir in the flour and cook for another 2 minutes.
Gradually whisk in the stock and cream.
Bring to boil, whisking constantly and cook until it thickens, stirring constantly, about 2 minutes.
Remove from the heat.
Stir in the spinach, cheese, sour cream and cayenne.
Season with salt and pepper.
Serve warm.
Makes about 3 cups.
