Wine Baked Chicken
8 boneless, skinless chicken breasts
1 lb. fresh mushrooms, cut in half
1 c. good quality dry white wine
1 tbsp. dried parsley
1 1/2 tsp. dried tarragon
1/2 tsp. salt
1/2 tsp. pepper
Preheat oven to 350. Use a 13x9x2" baking dish.
Arrange the chicken breasts rough side down, (where it was removed from the
bone), in the baking dish.
Place the mushrooms around the chicken.
Pour the wine over everything.
Mix the parsley, tarragon, salt and pepper together and sprinkle on top of the chicken.
Cover and bake for 35 - 40 minutes or until the chicken is no longer pink inside.
Makes 8 servings.
