Herb Wine Marinade
Makes: about 1/2 cups
1 cup dry white wine
1/2-cup olive oil
1/2 tsp cracked white peppercorns
1 tbsp white wine vinegar
1 clove garlic, crushed
1 small onion, sliced (optional)
*1 tbsp finely chopped fresh herbs
(See note)
Mix all ingredients together in dish in which food is to be marinated.
*Omit onion if using for seafood.
Use for lamb, veal, chicken, shellfish and fish, or as directed in
recipes.
Note: Use a mixture of herbs to complement the food, such as:
Lamb-thyme, parsley, rosemary mint
Veal-marjoram, tarragon, parsley, sage
Chicken-marjoram, thyme, parsley, tarragon
Seafood-dill, marjoram, parsley chervilRecipe
