Meatball Dinner

Meatball Dinner
for meatballs:
3 slices bread
1/2 cup milk
1 beaten egg
1 pound ground beef
3 Tablespoons freshly grated onion
3 Tablespoons snipped parsley
1 teaspoon salt
1/4 teaspoon ground black pepper
flour
2 Tablespoons shortening
for remaining part of dinner:
2 cups tomato juice
1 cup water
1/2 cup chopped carrots
1/2 cup chopped celery
1 teaspoon Kitchen Bouquet/Gravy Master sauce
1 teaspoon salt
for meatballs:
Soften bread in milk; add egg.
Mix ground beef, onion, parsley, salt and pepper.
Combine bread and meat mixture.
Roll into 18 balls.
Roll in flour.
Melt shortening in pan and brown meatballs.
Drain off excess fat.
for remaining part of dinner:
Add tomato juice, water, carrots, celery,
browning sauce and salt.
Cover; simmer 45 minutes.
Serve with rice, buttered noodles or mashed potatoes (our favorite).
Makes 6 servings.
