1 pound lean beef, ground
1/2 pound pork, ground
1/2 cup applesauce
3/4 cup soft bread crumbs
1 egg, lightly beaten
1 medium onion, chopped fine
salt and pepper
flour
3 Tablespoons bacon fat
2/3 cup ketchup
1/2 cup water
If you can, have the butcher grind beef and pork together.
Mix with applesauce, bread crumbs, egg and onion.
Season to taste and roll into in small balls, about the size
of a walnut.
Roll in flour and brown well in bacon fat in a heavy skillet.
Transfer to a shallow casserole.
Mix ketchup and water and pour over top.
Cover and bake at 375 degrees F. for 35 to 40 minutes.
Stir once or twice while baking.
Makes 4 to 5 servings.
Note:
Instead of the ketchup you can use canned tomato sauce,
barbecue sauce or a can of undiluted tomato soup to which
salt and a little sweet basil are added.
Serve with macaroni and cheese or baked potatoes and
buttered broccoli.
