Veal + Ham Pie

Recipe Introduction
A classic "stick to your ribs" meat pie for a cold night.
List of Ingredients
3 tbsp. butter
3 tbsp. flour
1 c. chicken or beef stock
1/2 c. heavy cream
2 tbsp. sherry
a generous grating of fresh nutmeg
salt and ground black pepper to taste
1 1/2 lbs. boneless veal shoulder, trimmed of excess fat
...and cut into 1" cubes
3/4 lb. cooked ham, cut into 1" cubes
1/2 lb. fresh mushrooms, stemmed and quartered
1/2 medium finely chopped onion
1 tbsp. dried parsley or 1/4 c. finely chopped fresh
pastry dough for a 9" pie crust
1 beaten egg yolk Recipe
Preheat oven to 400. Need an 8 or 9" pie plate.
Melt the butter in a saucepan over a medium heat.
Stir in the flour and cook for 2 - 3 minutes, stirring frequently.
Slowly stir in the stock, cream, sherry, nutmeg, salt, and pepper.
Bring to a boil, stirring frequently, and remove from the heat.
Stir in the veal, ham, mushrooms, onion, and parsley.
Pour into the pie plate; place the crust on top and crimp edges around the plate.
Brush with the beaten egg yolk and cut a vent in the top of the crust.
Bake for 15 minutes. Reduce temperature to 350, and bake for 60 -
75 minutes, until crust is golden brown.
Serve directly from the baking dish.
Makes 4 - 6 servings.
