Cheesecake Muffins #2, regular
3 ounces softened cream cheese
2 Tbsp sugar
1 cup flour
1/2 cup sugar
3 Tbsp cocoa, unsweetened
2 tsp baking powder
1/2 tsp salt
1 egg, beaten
3/4 cup milk
1/3 cup oil
Heat oven to 350 degrees. Line muffin tin with papers.
In a small bowl blend cream cheese and 2 tbsp. sugar until fluffy.
In a large bowl combine the flour, 1/2 cup sugar, cocoa, baking
powder and salt.
Make a well in the center of dry ingredients.
Combine egg, milk and oil.
Add all at once to the dry mixture, stirring until moistened. (Batter
should be lumpy.)
Spoon about 1 Tablespoon chocolate batter into each muffin cup.
Drop 1 teaspoon cream cheese on top and then top with more
chocolate batter.
Bake until toothpick inserted in center comes out clean, about 20
minutes.
