Cornmeal + Whole Wheat Muffins
2 eggs
2 cups yogurt
1 Tbsp honey
1 Tbsp oil
1 tsp baking powder
1/2 cup whole wheat flour
1 cup fine cornmeal
1 cup coarse cornmeal
Preheat oven to 375oF, prepare pans. Put the first four ingredients into a
bowl and mix well. Add the remaining premixed ingredients & blend until just
combined. Spoon into pans & bake for 15-20 mins. Makes 12 muffins.
