Cranberry Orange Muffins

1 1/2 cups white flour
1/2 cup granulated white sugar
1 1/2 teaspoons powdered cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 1/3 cups whole berry cranberry sauce
1 slightly beaten egg
1/2 cup low fat plain yogurt or buttermilk
1/4 cup vegetable oil
1 teaspoon orange rindRecipe
Preheat oven to 400 degrees F.
Coat a 12 muffin pan with cooking spray, or butter
flavored shortening. Or use paper liners.
Use a large bowl to combine the flour, sugar, cinnamon,
baking powder and soda. Mix together well.
Add the cranberry sauce, egg, yogurt, vegetable oil
and orange rind. Stir until just combined.
Spoon into muffin pan.
Bake for 25 minutes or until firm to the touch.
Makes 12 large muffins.
